Ingredients

Salisbury Steak Meatloaf

  • Ground beef 85 % lean-2 lb (1 kg)
  • Onion quartered-1
  • Fresh parsley- 1/3 cup
  • Garlic cloves-3
  • 1/2 of green bell pepper
  • Panko breadcrumbs-1 cup
  • Large eggs-2
  • Marinara sauce-1/2 cup
  • Worcestershire sauce-1 tablespoon
  • Dijon mustard- 3 tablespoons
  • Cracked black pepper-1/2 teaspoon
  • Salt-as needed

Mushroom Gravy

  • Olive oil- 2 tablespoons
  • Small onion sliced- 1
  • Garlic cloves minced-2
  • Brown mushrooms sliced-8 oz (250 g)
  • Flour all purpose or plain-3 tablespoons
  • Beef broth or stock - 2 cups 500 ml
  • Water-3/4 cup
  • Dijon mustard- 2 tablespoons
  • Worcestershire sauce- 2 tablespoons
  • Salt and pepper- to taste
  • Fresh parsley finely chopped-2 tablespoons, to garnish

Instructions

For the Salisbury Steak Meatloaf

  • Preheat your oven to 375 F (190 C). Grease a loaf pan with oil generously. Keep aside.
  • Add the garlic, onion, 1/2 of green bell pepper and parsley to a food processor. Pulse until minced, scraping down the sides if needed.
  • In a large bowl combine the minced veggies together with ground beef, panko breadcrumbs, eggs, marinara sauce, Worcestershire sauce, Dijon mustard, crack pepper and salt. Mix JUST until combined. Don't over mix otherwise the meatloaf will be tough.
  • Add the meat mixture to the loaf pan, gently press meat down and shape evenly. Bake meatloaf  at 375 F |190 C for 1 hour and 10 minutes or until it is cooked through.
  • Allow to rest for 10 minutes before slicing. Serve meatloaf slices topped with mushroom gravy over mashed potatoes.

Mushroom Gravy

  • Heat oil in a large skillet over medium high heat. Add the sliced onion and cook until slightly golden brown, then add the mushrooms and garlic; cook for 3-4 minutes or until golden.
  • Turn the heat to medium. Stir  in flour and cook for 30 seconds, stirring continuously.
  • Pour the beef broth into the skillet. Keep stirring until lump free. 
  • Add the remaining ingredients ( water, Worcestershire sauce, salt and pepper); cook until gravy is thickened. 
  • Garnish with fresh parsley. Enjoy!
