Ingredients

  • 1 tablespoon olive oil
  • 1 pound chicken breasts boneless and skinless, cut into bite-sized pieces
  • 4 garlic cloves minced
  • 1 tablespoon tomato paste
  • ¾ cup sun-dried tomatoes drained and very finely chopped
  • teaspoons dried oregano
  • 2 teaspoons paprika
  • ¼ teaspoon red pepper flakes or to taste
  • 8 ounces dried spaghetti or pasta of your choice
  • 3 cups chicken stock
  • ¾ cup heavy cream
  • ½ cup grated Parmesan cheese
  • Freshly ground black pepper to taste
  • Fresh basil to garnish

Instructions

  • Heat the olive oil in a large, deep skillet over medium heat. Once hot, add the chicken pieces and season generously with black pepper. Cook for about 5 minutes, stirring occasionally, until the chicken starts to brown on all sides.
  • Lower the heat and stir in the garlic, tomato paste, sun-dried tomatoes, oregano, red pepper flakes, and paprika. Cook for 1-2 minutes, just until the garlic softens and everything smells amazing.
  • Add the spaghetti and pour in the chicken stock. Give everything a good stir, cover the pan with a lid, and let it simmer for 15–20 minutes. Note: Stir the pasta frequently using a large spoon, fork, or tongs to prevent it from sticking to the pan or clumping together.
  • Reduce the heat to low. Add the heavy cream, and stir gently for 1–3 minutes, until the cream is warmed through. Make sure the chicken is fully cooked, then taste and adjust seasoning with salt and pepper if needed.
  • Turn off the heat and stir in the Parmesan until melted and creamy. Garnish with fresh basil. Serve warm and enjoy!

Notes

Store any leftovers in an airtight container in the fridge for up to 3 days. Reheat gently on the stovetop or in the microwave with a splash of broth or cream to bring the sauce back to life. Freezing isn’t recommended—this dish is best enjoyed fresh.
