JAPANESE SALAD DRESSING FROM SCRATCH

Ingredients

  • Carrot cubed-1/2 cup
  • Celery chopped- 1/4 cup
  • Onion chopped- 1/4 cup
  • Ginger minced- 2 tbsp.
  • Orange peeled, seeded and cubed-1
  • Light soy sauce- 1 1/2 tbsp.
  • Rice vinegar- 1/4 cup
  • Ketchup - 1 1/4 tbsp.
  • Mayonnaise- 1 tbsp.
  • Vegetable oil- 1/2 cup
  • Sugar- 1 tsp.
  • Salt- to taste

Instructions

  • Blend the carrots, onions, celery, orange and ginger in a food processor until pureed.
  • Transfer to a medium bowl.
  • Add the remaining ingredients ( soy sauce, ketchup, mayonnaise, vegetable oil, sugar and rice vinegar) and mix until well combined. Adjust seasoning with salt, if required.
  • Cover and refrigerate for up to 1 week.
  • Stir well before serving.
  • Enjoy!
