- Carrot cubed-1/2 cup
- Celery chopped- 1/4 cup
- Onion chopped- 1/4 cup
- Ginger minced- 2 tbsp.
- Orange peeled, seeded and cubed-1
- Light soy sauce- 1 1/2 tbsp.
- Rice vinegar- 1/4 cup
- Ketchup - 1 1/4 tbsp.
- Mayonnaise- 1 tbsp.
- Vegetable oil- 1/2 cup
- Sugar- 1 tsp.
- Salt- to taste
Blend the carrots, onions, celery, orange and ginger in a food processor until pureed.
Transfer to a medium bowl.
Add the remaining ingredients ( soy sauce, ketchup, mayonnaise, vegetable oil, sugar and rice vinegar) and mix until well combined. Adjust seasoning with salt, if required.
Cover and refrigerate for up to 1 week.
Stir well before serving.
