- 4 lemons
- 3 tablespoons black peppercorns
- 1 tablespoon white peppercorns optional
- 1 tablespoon coarse salt
Preheat your toaster oven or regular oven to 170˚F.
Line a small baking sheet with parchment paper.
Using a microplane grater, zest 4 lemons. Be careful to only remove the yellow outer layer and not the bitter white pith underneath.
Spread the lemon zest out in a single layer on the prepared baking sheet and place it in the oven.
Let the lemon zest dry completely for approximately 40-60 minutes.
Once dried, let the lemon zest cool completely.
Add the dried lemon zest, peppercorns, white pepper and salt to a spice grinder or small high-powered blender.
Pulse the mixture a few times until it is combined, but still has some coarse texture. Be careful not to over-process the mixture, as it can become too fine.
Your homemade dried lemon zest seasoning is ready to use!
You can keep the seasoning in an airtight container and store it in a spice drawer for up to six months.
