Ingredients
2large boneless skinless chicken breastscut horizontally to make 4 fillets
Cut the chicken breasts in half lengthwise to make thinner slices.
Cover with plastic wrap and flatten to ½ inch thick using the textured side of a meat mallet.
Cook the Chicken:
Season both sides of each chicken piece with salt and pepper.
Heat olive oil in a large skillet over medium-high heat.
Cook the chicken in batches, 4-5 minutes on each side, until golden brown. Transfer to a plate and loosely cover it with aluminum foil to keep it warm. Make sure to turn off the heat while doing this step.
Make the Sauce:
Turn the heat to medium-high and melt the butter in the same skillet. Once it is melted, add the flour and garlic. Cook for about a minute, stirring frequently.
In a measuring cup, mix together the chicken broth, heavy cream, Worcestershire sauce, Dijon, honey, onion powder, oregano, basil, and parsley.
Gradually add the sauce mixture, stirring continuously. Bring to a boil, then reduce to a simmer and let it reduce for about 4-5 minutes.
Finish the Dish:
Lower the heat and slowly add Parmesan cheese, stirring continuously.
Stir in the lemon juice.
Return the chicken to the skillet, spooning sauce over it. Cook for 3-5 more minutes or until the sauce thickens to your liking.
Serve:
Garnish with parsley and serve the chicken with mashed potatoes and your choice of roasted vegetables.
