Ingredients

  • 1 tablespoon extra virgin olive oil
  • 1 tablespoon unsalted butter
  • 2 large yellow onions thinly sliced (about 2 cups)
  • 1 3/4 cups beef broth divided
  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper
  • 1/2 teaspoon Herbs de Provence or Italian seasoning
  • 1 tablespoon Worcestershire sauce
  • 1 package 16 ounces potato gnocchi, uncooked
  • 1 ½ cups Gruyère cheese shredded
  • Parsley for garnish

Instructions

  • Heat olive oil and butter in a large oven-safe skillet over medium heat.
  • Add the onions and a pinch of salt, stirring occasionally to prevent burning. Cook slowly, lowering the heat if needed, for 30–40 minutes until the onions turn deep golden-brown and develop a rich, sweet flavor. If they start to dry out, add a splash of beef broth to keep them soft and prevent sticking.
  • Season with salt, pepper, and Herbs de Provence.
  • Add the remaining beef broth and Worcestershire sauce, bring to a simmer.
  • Add gnocchi and simmer for 3-5 minutes until tender.
  • Sprinkle Gruyère cheese on top, broil for 2-3 minutes until melted and golden.
  • Garnish with parsley and serve.

Notes

Let leftover gnocchi cool completely before storing. Transfer to an airtight container and refrigerate for up to 3-4 days. When you’re ready to enjoy it again, reheat gently in a skillet over low heat for the best texture, or use the microwave for a quicker option.
