Fluffy Scrambled Eggs

- 2 large eggs
- 2 tablespoons salted butter
- 1/4 cup shredded Mozzarella cheese
- Green onions to garnish
Crack the eggs into a medium bowl and whisk for 1 minute or until no streaks of egg white remaining.
Melt the butter over low heat in an 8-inch nonstick skillet.
Add the eggs and let them cook for a few seconds without stirring, then whisk the top, without touching down on the bottom of the pan. When the top is foamy, sprinkle mozzarella cheese and whisk again.
Allow the bottom of the eggs set for 4-5 seconds. Using a silicone spatula, fold and stir the eggs from the edge of the pan into the middle. Continue to do this for 30 seconds.
Remove from the heat. Fold and stir one more time to allow the uncooked egg spots to hit the surface and to form more curds.
Season with salt and pepper.
Garnish with green onions.
Serve immediately and enjoy!
