- 1 lb. ground turkey
- Salt and pepper to taste
- 2 tablespoons peanut oil olive or avocado oil, divided
- ½ cup yellow onion finely diced
- 2 large eggs whisked until frothy
- 5 cups green cabbage shredded
- 1 cup carrots shaved & roughly chopped
Sauce
- ½ cup chicken broth
- ¼ cup soy sauce
- 3 cloves garlic minced
- 1 teaspoon fresh ginger grated
- 1 tablespoon rice vinegar
- 1 tablespoon honey
- 1 teaspoon Asian chili garlic sauce
- ½ teaspoon sesame oil optional
- 1/8 teaspoon white pepper
Garnishes
- Green onions
- Toasted sesame seeds
- Fried wonton strips
Mix together all the ingredients for the sauce and set it aside.
In a large skillet, heat 1 tablespoon oil over medium-low heat. Add the beaten eggs and scramble until fully cooked. Set aside.
Season the ground turkey with salt and pepper. In the same skillet, heat the remaining tablespoon of oil over medium-high heat. Cook the meat for 3 minutes. Add the onions and cook for 5-6 minutes, until the meat is fully cooked and no longer pink. Set aside.
Pour the sauce mixture into the skillet and use a silicone spatula to scrape and incorporate any bits from the bottom and sides, enhancing the sauce's flavor. Allow the sauce to gently bubble and simmer for 4 minutes to reduce.
Add in the cabbage and carrots, and cook for 5-6 minutes until you achieve the desired texture.
Put the meat mixture and eggs back into the skillet, toss to combine and heat up. Sprinkle with sesame seeds and green onions for garnish, then serve!
