Ingredients

  • 3 cups cooked chicken diced or shredded (rotisserie chicken works perfectly!)
  • 3 cups frozen broccoli florets thawed, about 12 oz. bag
  • 2 cans (10.5 oz.) each cream of mushroom/chicken soup (condensed)
  • cups shredded cheddar cheese divided
  • cups cooked rice white, brown, or minute rice all work

Optional addition

  • Crushed Ritz crackers or fried onions for topping

Instructions

  • Preheat your oven to 375°F (190°C). Lightly grease a 9x13-inch baking dish with cooking spray or butter.
  • In a large mixing bowl, combine the diced chicken, broccoli florets, both cans of cream of mushroom soup, 2½ cups cooked rice, and 1½ cups shredded cheddar cheese (save 1 cup for topping). Stir everything together until well combined. If it seems too thick, add a splash of milk or chicken broth.
  • Transfer the mixture into your prepared 9x13-inch baking dish. Spread it out evenly with a spatula.
  • Sprinkle the remaining 1 cup of cheddar cheese evenly over the top of the casserole.
  • Place the casserole in the preheated oven and bake for 25-30 minutes, until the casserole is hot and bubbly throughout and the cheese on top is melted and slightly golden.
  • Optional: For extra crunch, add crushed Ritz crackers mixed with melted butter or French fried onions on top of the cheese. Bake for 5 minutes more.
  • Remove from the oven and let it rest for 5 minutes before serving. This helps it set up and makes serving easier.

Time-Saving Hacks:
  • Use a rotisserie chicken from the grocery store - it's already cooked and seasoned!
  • Grab pre-cooked rice from the freezer section or use leftover rice
