Ingredients

  • 5-6 cups. cooked chicken breasts diced
  • ½ cup pecans roughly chopped
  • 2 stalk celery diced
  • 3 green onions sliced
  • 1 cup mayonnaise
  • 1 lemon juiced
  • salt and pepper to taste
  • 1/2 cup mozzarella cheese shredded
  • 1 pomegranate or 1 cup pomegranate arils
  • 2 rosemary sprigs for decoration, optional

Instructions

  • Add the cooked chicken, pecans, celery, green onions to a mixing bowl along with the mayonnaise, and lemon juice. Season with salt and pepper. Mix everything together until it's well combined.
  • Transfer the salad to the serving dish and arrange it in the shape of a Christmas stocking.
  • Decorate the stocking "sole" and the top with shredded Mozzarella cheese. Spread the pomegranate arils over the entire stocking, except for the "Sole" and the top.
  • Let it chill in the fridge until you're ready to serve.
  • Enjoy!

Notes

Storage: As this recipe is intended to be served chilled, avoid leaving it at room temperature for more than two hours. Instead, store it in the refrigerator where it can be kept fresh for up to 3 to 5 days.
