- 2 cups 10 ounces all-purpose or plain four
- 1/4 cup 2 ounces granulated sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 3/4 cups 440 ml milk
- 1/4 cup vegetable oil
- 1 medium egg
- 2 teaspoons vanilla extract
- 1/2-3/4 cup chocolate chips
In a large bowl combine together the flour, sugar, baking powder, baking soda and salt.
Whisk the wet ingredients together in a measuring cup using a wire whisk. Mix until smooth.
Make a well in the centre and add the wet ingredients. Mix just until combined. The batter will be thick and creamy, and should pour off the ladle smoothly.
Fold in the chocolate chips.
Heat your griddle or nonstick pan over medium heat and wipe over with vegetable oil or a little butter to grease pan. Once it is hot, pour 1/4 cup of batter onto the pan or griddle and spread out into a round shape with the bottom of a measuring cup.
When the bubbles begin to appear on the surface, flip with a spatula and cook further until golden. Repeat with remaining batter.
Serve with melted chocolate, honey, maple syrup and fresh berries.
