- 3/4 cup cottage cheese about 6 ounces
- 1-2 tablespoons sour cream
- 1 small bunch fresh parsley about ¼ cup leaves
- Salt to taste
- Freshly ground black pepper to taste
- 4 slices high protein bread or whole grain bread
- 2 small chicken breasts grilled and sliced (about 10 oz.)
- 1 small cucumber thinly sliced
In a blender or food processor, blend the cottage cheese, sour cream, and chopped parsley until smooth. Season with salt and pepper to taste.
Toast the bread slices in a toaster until lightly golden. Spread each slice with the cottage cheese mixture.
Arrange the cucumber slices on 2 slices of bread, then add the chicken, and finish with another layer of cucumber slices. Season lightly with salt and pepper, and top with the second slice of bread, spread side down.
Slice if you want and serve immediately.
