- 4 large white onions thinly sliced
- 1 cup sun-dried tomatoes diced
- 1/4 teaspoon EACH: salt and black pepper plus more to taste
- 1 head garlic top sliced off
- 1/4 cup olive oil
- 2 tablespoons balsamic glaze
- ¾ pound farfalle orecchiette, penne, fusilli, or rigatoni pasta
- 3/4 cup cream cheese or Mascarpone
- 1/3 cup freshly grated Parmesan plus more for serving
- 1 small bunch fresh basil finely chopped
Preheat your oven to 400 °F.
In a large casserole dish, add sliced onions, diced sun-dried tomatoes, salt, pepper. Toss everything to combine.
Place a whole garlic head in the center of the dish. Drizzle the entire dish with olive oil (or leftover sun-dried tomato oil) and balsamic glaze.
Cover with foil and bake for 1 hour, tossing halfway through to ensure even cooking. The onions should be caramelized by the end.
Towards the end of baking, cook your pasta in salted boiling water until al dente. Drain, reserving 1-2 cups of pasta water.
When the onions and garlic are done, squeeze the roasted garlic into the baking dish and mash it. Add mascarpone and a splash of pasta water, stirring until combined.
Add the cooked pasta to the baking dish and mix well.
Stir in grated Parmesan and fresh basil, adding more pasta water to thin the sauce if needed.
Season with salt and pepper to taste. Serve with extra Parmesan if desired.

- To reheat, simply place the pasta in a skillet over medium heat, adding a splash of water or broth to help loosen the sauce. Stir occasionally until heated through. You can also reheat in the microwave, covering the pasta and heating in 1-minute intervals, stirring in between, until warm.
