Caramelized Onion Pasta

Ingredients

  • 4 large white onions thinly sliced
  • 1 cup sun-dried tomatoes diced
  • 1/4 teaspoon EACH: salt and black pepper plus more to taste
  • 1 head garlic top sliced off
  • 1/4 cup olive oil
  • 2 tablespoons balsamic glaze
  • ¾ pound farfalle orecchiette, penne, fusilli, or rigatoni pasta
  • 3/4 cup cream cheese or Mascarpone
  • 1/3 cup freshly grated Parmesan plus more for serving
  • 1 small bunch fresh basil finely chopped

Instructions

  • Preheat your oven to 400 °F.
  • In a large casserole dish, add sliced onions, diced sun-dried tomatoes, salt, pepper. Toss everything to combine.
  • Place a whole garlic head in the center of the dish. Drizzle the entire dish with olive oil (or leftover sun-dried tomato oil) and balsamic glaze.
  •  Cover with foil and bake for 1 hour, tossing halfway through to ensure even cooking. The onions should be caramelized by the end.
  • Towards the end of baking, cook your pasta in salted boiling water until al dente. Drain, reserving 1-2 cups of pasta water.
  • When the onions and garlic are done, squeeze the roasted garlic into the baking dish and mash it. Add mascarpone and a splash of pasta water, stirring until combined.
  • Add the cooked pasta to the baking dish and mix well.
  • Stir in grated Parmesan and fresh basil, adding more pasta water to thin the sauce if needed.
  • Season with salt and pepper to taste. Serve with extra Parmesan if desired.

Notes

  • Store in an airtight container in the refrigerator for up to 3 days. 
  • To reheat, simply place the pasta in a skillet over medium heat, adding a splash of water or broth to help loosen the sauce. Stir occasionally until heated through. You can also reheat in the microwave, covering the pasta and heating in 1-minute intervals, stirring in between, until warm.
