Ingredients

  • 1 pound boneless skinless chicken breasts cubed
  • Salt & black pepper
  • 1 teaspoon Italian seasoning
  • ½ teaspoon smoked paprika
  • 1 tablespoon olive oil
  • 3 cloves garlic minced
  • 2 cups dry orzo
  • cups chicken broth
  • 1 5.2 oz package Boursin Garlic & Fine Herbs
  • 1 ½ cups cherry tomatoes halved
  • 3 cups fresh spinach
  • ½ cup grated Parmesan
  • pinch red pepper flakes optional
  • Squeeze of lemon optional

Instructions

  • Preheat oven to 400°F.
  • Season the chicken with salt, pepper, Italian seasoning, and smoked paprika.
  • In a large oven-safe skillet, heat olive oil over medium heat. Sear chicken 3–4 minutes (it will finish cooking in the oven).
  • Add the garlic and cook 30 seconds until fragrant.
  • Stir in orzo and broth. Nestle the Boursin in the center.
  • Scatter cherry tomatoes around (place some cut-side up on top.
  • Cover with foil and bake 25-30 minutes, until orzo is tender.
  • Remove foil and stir until creamy. Fold in spinach and Parmesan. Bake further uncovered 3–5 minutes.
  • Finish with lemon, fresh basil, and chili flakes if desired.

Notes

Refrigerate: up to 4 days
Reheat: add a splash of broth, cream, or milk to loosen
Freezing: not recommended (cream sauce texture changes)
