Air Fryer Salmon Bites with Garlic Cream Sauce

Ingredients

For the Salmon

  • 1 pound 500 grams skinless salmon, cut into 1 inch cubes
  • 1 tablespoon olive oil
  • 2 tablespoons fresh lemon juice
  • 3 garlic cloves minced
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground black pepper

Garlic Cream Sauce

  • 3 tablespoons unsalted butter
  • 5 garlic cloves minced
  • 1 cup heavy cream or half & half
  • 1/2 cup chicken broth
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1/2 cup fresh grated Parmesan cheese
  • 2 tablespoons lemon juice
  • 1 tablespoon fresh parsley chopped

Instructions

Air Fryer Salmon

  • Preheat your air fryer to 390°F| 199°C.
  • Pat dry the salmon with paper towels. Cut into 1-inch cubes, using a sharp knife.
  • In a medium bowl combine the olive oil, lemon juice, smoked paprika, garlic, salt and pepper.
  • Add the salmon bites and gently toss to coat.
  • Place the salmon bites in your air fryer basket in a single layer.  You might need to cook them in batches. Air fry for 8 minutes at 390 F| 199 C. Flip them over halfway through, or shake the basket at the halfway mark if the basket isn’t too crowded. The internal temperature should reach 140-145°F once it is cooked through. Transfer to a bowl.

Garlic Cream Sauce

  • While the salmon is cooking, make the garlic cream sauce.
  • Melt the butter in a large skillet over medium high heat. Add the garlic and sauté until fragrant, about 30 seconds.
  • Pour in the chicken broth and cook for 2 minutes.
  • Reduce the heat to low-medium, add the heavy cream and bring to a gentle simmer, stirring occasionally. Season with salt and pepper.
  • Add the Parmesan cheese and cook until the cheese melts and the sauce thickens.  Remove from the heat and add in the lemon juice.
  • Garnish with fresh parsley.
  • Pour the garlic cream sauce over the salmon bites.
  • Serve over  mashed potatoes or steamed rice.

Notes

Storage and reheat: Place any leftovers in an air-tight container and refrigerate for up to 2 days.  To reheat, air fry for 1-2 minutes at 390 F|199 C.
