Description

Ingredients

  • 1/2 cup sugar
  • ½ cup walnuts
  • 4 large egg whites
  • ⅔ cup cornstarch
  • High smoke point vegetable oil, for frying the shrimp ( Canola or grapeseed oil)
  • 1 pound shrimp (peeled, deveined, tales off or on
  • Green onions , sliced, for garnish ( optional)

Honey Sauce

  • ¼ cup mayonnaise
  • 1 tablespoon sweetened condensed milk
  • 2 tablespoons honey
  • ½ teaspoon paprika

Instructions

  • Place water, sugar, and walnuts in a saucepan and bring to a gentle boil. Let it simmer for 2-3 minutes, then transfer the walnuts to a wire cooling rack to dry.
  • In a medium-sized bowl, whisk the egg whites until they become light and foamy. Add the cornstarch to the bowl and continue whisking until the mixture is well combined and smooth.
  • Heat oil in a skillet, frying pan, or wok over medium-high heat until it reaches a temperature of 350 degrees F (175 degrees C).
  • Dip the shrimp into the batter, allow any excess batter to drip off before placing the shrimp into the hot oil in your skillet. This will ensure a crispy and even coating on the shrimp.
  • Fry the shrimp for approximately 2-3 minutes, or until they turn a light golden brown color. Once cooked, carefully transfer to a plate lined with paper towels or a rack to drain off any excess oil.
  • In a small bowl, combine the sauce ingredients including mayonnaise, sweetened condensed milk, honey, and paprika. Stir the mixture until it becomes smooth.
  • Gently toss the cooked shrimp in the sauce, ensuring they are evenly coated.
  • Transfer onto plates and generously top with the candied walnuts. For an extra touch of freshness, garnish with sliced green onions.

Notes

Storage:

Allow to cool down to room temperature. Transfer to an airtight container or a sealable plastic bag. Ensure that the container is large enough to accommodate the shrimp without crushing or squishing them. If there is any sauce remaining, you can either store the shrimp with the sauce or separate them into different containers. Storing them together may help maintain the flavor and texture of the shrimp. Place the container in the refrigerator and store for up to 2-3 days.
