Ingredients
- Lamb meat ( with fat)- 1 kg/ 2.2 lbs
- Pitta Bread- 4
- Onion- 1 large
- Garlic cloves-2
- Fresh herbs ( coriander leaves/ parsley/leek)-100 gm/ 0.2 lbs
- Cumin seeds- 1 tsp
- Coriander seeds- 0.5 tsp
- Cayenne pepper- To Taste
- Salt- To Taste
- Black pepper- To Taste
- For Serving
- Labneh or fresh thick yogurt- 1 cup
- Fresh Tomatoes-2
- Onion-1 large
- Fresh coriander and parsley leaves
- Fresh Red chili
Instructions
- Chop lamb meat into small pieces or grind in meat grinder.
- Take a medium pan, heat it. Add cumin and coriander seeds. Fry for 1 min.
- Now transfer spices into the mortar and crush well. Add approximately 2/3 tsp of salt, cayenne pepper and black pepper.
- Chop onion, garlic cloves and fresh herbs into small pieces,
- Combine lamb meat with crushed spices, onion, garlic and herbs.Mix for 5-7 min.
- Form patties ( 2 cm thick). Fry or bake them for 25-30 minutes. ( If you plan to bake, preheat oven to 220 C /425 F).
- Slice tomatoes, onion and red chili for serving.
- Mix yogurt with the remaining spices.
- Make pitta bread warm in the toaster maker.
- Fill each pitta bread with 1 tbsp of yogurt,onion, chili and sliced tomatoes.
- Serve immediately.
