Description

Enjoy all the flavors of Egg Roll in a Bowl with a lean twist: Ground Turkey. A low-carb dish that's quick and flavorful. 


Ingredients

Scale
  • 1 lb. ground turkey
  • Salt and pepper, to taste
  • 2 tablespoons peanut oil, olive or avocado oil, divided
  • ½ cup yellow onion, finely diced
  • 2 large eggs, whisked until frothy
  • 5 cups green cabbage, shredded
  • 1 cup carrots, shaved & roughly chopped

Sauce

  • ½ cup chicken broth
  • ¼ cup soy sauce
  • 3 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated
  • 1 tablespoon rice vinegar
  • 1 tablespoon honey
  • 1 teaspoon Asian chili garlic sauce
  • ½ teaspoon sesame oil, optional
  • 1/8 teaspoon white pepper

Garnishes

  • Green onions
  • Toasted sesame seeds
  • Fried wonton strips

Instructions

  • Mix together all the ingredients for the sauce and set it aside.
  • In a large skillet, heat 1 tablespoon oil over medium-low heat. Add the beaten eggs and scramble until fully cooked. Set aside.
  • Season the ground turkey with salt and pepper. In the same skillet, heat the remaining tablespoon of oil over medium-high heat. Cook the meat for 3 minutes. Add the onions and cook for 5-6 minutes, until the meat is fully cooked and no longer pink. Set aside.
  • Pour the sauce mixture into the skillet and use a silicone spatula to scrape and incorporate any bits from the bottom and sides, enhancing the sauce's flavor. Allow the sauce to gently bubble and simmer for 4 minutes to reduce.
  • Add in the cabbage and carrots, and cook for 5-6 minutes until you achieve the desired texture.
  • Put the meat mixture and eggs back into the skillet, toss to combine and heat up. Sprinkle with sesame seeds and green onions for garnish, then serve!

  • Meat Choices: Ground turkey, chicken, beef or pork all work well for this recipe.
  • Eggs Addition: While not traditional in egg rolls, scrambled eggs can provide extra protein and a touch of "fried rice" flavor to the dish.
  • Rice Vinegar: You can substitute with apple cider vinegar, followed by white wine vinegar.
  • Frozen Vegetables: To enhance the dish further, consider adding mixed frozen vegetables when you add the sauce.
  • Pairing Ideas: Serve your egg roll in a bowl with rice, fried wonton strips, sliced avocado, roasted veggies, or other sides of your choice.
