Description
Enjoy all the flavors of Egg Roll in a Bowl with a lean twist: Ground Turkey. A low-carb dish that's quick and flavorful.
Ingredients

- 1 lb. ground turkey
- Salt and pepper, to taste
- 2 tablespoons peanut oil, olive or avocado oil, divided
- ½ cup yellow onion, finely diced
- 2 large eggs, whisked until frothy
- 5 cups green cabbage, shredded
- 1 cup carrots, shaved & roughly chopped
Sauce
- ½ cup chicken broth
- ¼ cup soy sauce
- 3 cloves garlic, minced
- 1 teaspoon fresh ginger, grated
- 1 tablespoon rice vinegar
- 1 tablespoon honey
- 1 teaspoon Asian chili garlic sauce
- ½ teaspoon sesame oil, optional
- 1/8 teaspoon white pepper
Garnishes
- Green onions
- Toasted sesame seeds
- Fried wonton strips
Instructions
- Mix together all the ingredients for the sauce and set it aside.
- In a large skillet, heat 1 tablespoon oil over medium-low heat. Add the beaten eggs and scramble until fully cooked. Set aside.
- Season the ground turkey with salt and pepper. In the same skillet, heat the remaining tablespoon of oil over medium-high heat. Cook the meat for 3 minutes. Add the onions and cook for 5-6 minutes, until the meat is fully cooked and no longer pink. Set aside.
- Pour the sauce mixture into the skillet and use a silicone spatula to scrape and incorporate any bits from the bottom and sides, enhancing the sauce's flavor. Allow the sauce to gently bubble and simmer for 4 minutes to reduce.
- Add in the cabbage and carrots, and cook for 5-6 minutes until you achieve the desired texture.
- Put the meat mixture and eggs back into the skillet, toss to combine and heat up. Sprinkle with sesame seeds and green onions for garnish, then serve!
