Description

Celebrate the holidays with this delicious Christmas Chicken Salad. A delightful blend of flavors—chicken, pecans, pomegranate, and more—perfect for festive feasting!


Ingredients

Scale
  • 5-6 cups. cooked chicken breasts, diced
  • ½ cup pecans, roughly chopped
  • 2 stalk celery, diced
  • 3 green onions, sliced
  • 1 cup mayonnaise
  • 1 lemon , juiced
  • salt and pepper, to taste
  • 1/2 cup mozzarella cheese, shredded
  • 1 pomegranate (or 1 cup pomegranate arils)
  • 2 rosemary sprigs, for decoration, optional

Instructions

  • Add the cooked chicken, pecans, celery, green onions to a mixing bowl along with the mayonnaise, and lemon juice. Season with salt and pepper. Mix everything together until it's well combined.
  • Transfer the salad to the serving dish and arrange it in the shape of a Christmas stocking.
  • Decorate the stocking "sole" and the top with shredded Mozzarella cheese. Spread the pomegranate arils over the entire stocking, except for the "Sole" and the top.
  • Let it chill in the fridge until you're ready to serve.
