- 2 cups (10 ounces) all-purpose or plain four
- 1/4 cup (2 ounces) granulated sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 3/4 cups (440 ml) milk
- 1/4 cup vegetable oil
- 1 medium egg
- 2 teaspoons vanilla extract
- 1/2-3/4 cup chocolate chips
Instructions
- In a large bowl combine together the flour, sugar, baking powder, baking soda and salt.
- Whisk the wet ingredients together in a measuring cup using a wire whisk. Mix until smooth.
- Make a well in the centre and add the wet ingredients. Mix just until combined. The batter will be thick and creamy, and should pour off the ladle smoothly.
- Fold in the chocolate chips.
- Heat your griddle or nonstick pan over medium heat and wipe over with vegetable oil or a little butter to grease pan. Once it is hot, pour 1/4 cup of batter onto the pan or griddle and spread out into a round shape with the bottom of a measuring cup.
- When the bubbles begin to appear on the surface, flip with a spatula and cook further until golden. Repeat with remaining batter.
- Serve with melted chocolate, honey, maple syrup and fresh berries.
