Description

Learn how to make Homemade Chicken Tortellini from scratch! Tips and suggestions will help you to make the perfect pasta dough. Fill with chicken, ricotta or spinach!


Ingredients

FOR THE DOUGH

  • Flour "00" or unbleached all-purpose flour- 1 cup
  • Large eggs- 2
  • Milk- 1/2 tsp.

FOR THE FILLING

  • Uncooked ground chicken with spices of your choice ( I usually add Italian seasoning, salt, garlic powder and onion powder)-1/2 cup

Instructions

  • Make Pasta Dough as described here: Homemade Pasta Dough.
  • Work with one piece of dough at a time. On a floured working surface roll it to make a strip.
  • Cut into 1 ½ inch/4 cm wide rectangles or circles.
  • Place about 1/4 tsps. of ground chicken in the center of each circle/rectangle. I love to use a piping bag for this job.
  • Fold the circle / square diagonally in half to form a half-moon/ triangle. Press the edges to seal, then bring together the corners, forming a ring. Lap one corner over the other, pressing firmly to seal. Transfer onto a clean, dry kitchen towel or floured board.
  • Repeat the same with the remaining dough.

Cook fresh tortellini in a saucepan filled with hot boiling and slightly salted water in batches until they float to the  top . Enjoy with Alfredo Sauce or freeze and use for Chicken Tortellini soup when needed.

 

Notes

I found that it is very handy to put the filling using a piping bag.
