Lemon Blueberry Ricotta Pancakes

These pancakes are absolutely perfect for those frosty winter mornings!

Ingredients you will need to make these lemon blueberry pancakes.

1. Combine dry ingredients in a large bowl. Mix together wet ingredients in a measuring cup.

2. Add wet ingredients into the dry ones. Fold in fresh blueberries.

3. Pour ⅓ cup of the batter onto a medium hot pan/ griddle. Cook until golden brown on both sides.

4. Serve with honey, blueberry syrup and butter.  Enjoy!
