You will Need

1. Blanch spinach for 1 minute, then cool in water. Squeeze out excess water and set aside.

2. Fry bacon until crispy, then drain on paper towels. Set aside.

3.Leave 1-2 teaspoons of bacon grease. Melt butter, cook onion until translucent (about 2 minutes), scraping up bacon bits.

4. Whisk in flour, cook till golden.  Gradually add half & half, whisking. Mix in Boursin.

5. Mix spinach into the Boursin sauce. Add parmesan, bacon, and combine for a burst of flavors! Enjoy!
