Ingredients

  • Yukon Gold/ Russet potatoes- 2 1/2 pound or 1 kg
  • Ham/smoked beef strips ( cut into strips)- 0.3 pound /200 gm, optional
  • Cheddar cheese( shredded)- 6 tbsp, divided
  • Ground black pepper- as needed

FOR  THE  SAUCE

  • Unsalted butter- 3 tbsp.
  • Garlic cloves ( minced)- 4
  • All purpose flour- 3 tbsp.
  • Milk ( low fat or full fat)- 3 cups
  • Ham/ smoked beef ( diced) 1 tbsp, optional
  • Beef  bullion cube (or salt)-1
  • Ground black pepper- 1 tsp.
  • Salt-to taste

Instructions

  • Preheat your oven to 400°F | 200°C with the rack in the center. Brush a 9 x 13-inch baking tray /dish with melted butter or spray with cooking oil. Keep aside.
  • Wash potatoes thoroughly using a food brush. Place a potato on the cutting board and make thin crosswise slices, about 1/8 -inch thick or 0.3 cm, stopping about 3/4 through the way down.  The potato slices must stay attached to the base. Repeat with remaining potatoes.
  • Alternatively you can insert ham/smoked beef pieces between potato slices.
  • Arrange the potatoes in the prepared baking tray.
  • In a medium-sized pan melt butter. Once it is melted , add the minced garlic and sauté until just fragrant, about 20-30 seconds. Stir in all-purpose flour and whisk until well combined. Add 1 tbsp. of ham/smoked beef pieces to boost the flavor.
  • Reduce the heat to low and gradually add 3 cups of the milk , beef bullion and black pepper. Bring to a boil until sauce thickens. Adjust salt to your liking. Remove from the heat.
  • Pour the creamy sauce over the potatoes, season with ground black pepper and top with 3 tbsp. of shredded cheddar cheese. Cover the baking dish tightly  with  aluminium foil and bake for 30 minutes  or until potatoes are just tender. Remove the foil,  sprinkle with the remaining Cheddar cheese ( 3 tbsp) and bake for further 30 minutes, uncovered.
  • Serve immediately with Meatloaf, steamed broccoli, Lemon Garlic Roast Chicken or Garlic Herb Roasted Chicken.
