Description
Poached chicken breast is tender, moist and as healthy as it is delicious. These chicken breasts are poached in some salted water with garlic, bay leaves and black peppercorns.

- 2 large boneless and skinless chicken breasts
- 2 quarts water or chicken broth
- 3 bay leaves
- 5 garlic cloves
- 1 teaspoon salt
- Black peppercorns as needed
Instructions
- Bring the chicken to room temperature.
- Fill the saucepan with water so the chicken breasts will be well submerged ( about 2 quarts) and bring it to a boil. Add the peppercorns, garlic, bay leaves, salt and chicken.
- Reduce the heat to low. Cover with the lid and bring to a gentle simmer; cook for ten minutes.
- Use the meat thermometer to check for doneness. The internal temperature should be 165°F.
- Once it is done, let your chicken rest in the poaching liquid for a couple of minutes. This allows the moisture trapped in the chicken to permeate its flash and settle. Remove from the water.

Yields 2 1/2-3 cups shredded chicken ( depends on the size of your chicken breasts).
