Tangy and addicting Russian marinated mushrooms are very easy to make. The perfect bite for your holiday appetizer table, you'll end up wanting to keep a jar in the fridge all year around. Delish!


  • Mushrooms- 2 kg /4.4 lb
  • Vinegar ( 5 %)- 12 tbsp.
  • Vegetable oil- 200 ml
  • Garlic cloves ( finely chopped)-12
  • Water-200 ml
  • Cloves-6-7
  • Black/red peppercorns- 10
  • Bay leaf- 8
  • Sugar - 3 tsp.
  • Salt- 3 tsp.


  1. Place the garlic, vinegar, vegetable oil, cloves, water, black/red pepper, bay leaves, sugar and salt in a large saucepan, whisk and bring to a boil.
  2. Carefully wash the mushrooms and trim the stems if you wish.
  3. Add the mushrooms to the marinade, toss to combine, and boil 7-9 minutes. Their volume will decrease by about a third. Remove from the heat and allow to cool completely.
  4. Refrigerate at least 8-12 hours before serving.
