HEALTHY LOW-CARB ZUCCHINI NOODLES

Super simple and tasty pasta-shaped veggie-  Zucchini noodles! This recipe is  perfect  for people on a gluten-free diet and for vegetarians. Zucchini noodles

Oftentimes, do you find yourself craving pasta and noodles? Like you need to prepare them as quickly as possible before the urge ceases? Or are you just a fanatic because you don’t like to be in the kitchen for long, and the quick and ease of cooking noodles or pasta give your way? Well, if either is the case, the zucchini noodles will completely change your perspective towards these foods.

To begin with, zucchini noodles is way far different from the ordinary pasta and noodles that you’re familiar with. It requires less preparation time, not to mention the varying ingredients and delicious seasonings. For its preparation, it requires the main ingredients – zucchini, olive oil, dried cherry tomatoes, basil leaves, garlic cloves, and kosher salt. Additionally, you may require more seasoning flavors like eggplants, black olives, Pecorino cheese and ground black pepper.

You are already set with ingredients, let’s get started. Here, you will need to place the zucchini over a bowl in a strainer, and grate it. In this strainer, you should add some salt to taste. Let it settle for around 2 minutes. After this while, squeeze excess liquid from the strainer for the zucchini to be virtually dry. By now, you should have whisked black pepper, some olive oil, and salt in a large bowl.

On the other hand, heat your skillet with enough oil, and add chopped garlic clove to fry for 1-2 minutes or until they are done. Add Sicilian sun dried tomatoes, and continue to cook under medium-high heat.  This shouldn’t take more than 2 minutes.

Add the earlier prepared zucchini. Toss all the components together. Next, you should add Italian spices then transfer all this mixture into a platter. When transferring the mixture, you should let the extra liquid drain and remain in the bowl. Lay the Pecorino cheese on one end of the platter and drizzle more oil on top. Through this part, you can lay some basil and olives in a nice pattern on top of this dish to appear delicious and appetizing. And there you have it, your tasty and appealing zucchini noodles delicacy.

And even though by name it’s classified as noodles, its preparation and cooking procedures says otherwise. The elegant zucchini noodles, as opposed to typical  noodles, require less time and flavors to cook. More importantly, it is more delicious and will totally revolutionize your thoughts on standard pasta. With the swift combination of all the ingredients and flavors, it is a meal well worth your time – to look for the ingredients, and money to buy them. Thereby, why not try to make it right from your kitchen and see the difference yourself?

Ingredients

  • Zucchini- 1 kg ( 1 large)
  • Sicilian Sun Dried Tomatoes- 4 tbsp
  • Pecorino Cheese ( grated)- 4 tbsp
  • Italian Roasted Spices- 1 tsp
  • Garlic cloves-1
  • Olive oil- 3 tbsp ( use olive oil left from the sun dried tomatoes)
  • Salt-to taste
  • Black pepper- to taste
  • Serving suggestion:
  • Fsh cutlets
  • Russian Cutlets

Instructions

  1. Chop the garlic & fry until cooked but not browned.
  2. Add sun dried tomatoes and saute for a few minutes.
  3. Stir in zucchini noodles until done ( 1-2 minutes).
  4. Season with Italian roasted spices and add grated Pecorino cheese.
  5. Serve immediately with fish cutlets or Russian cutlets.
