- FOR THE CHICKEN
- Chicken Fillet- 1 kg
- Corn flour 1/2 cup
- Olive oil- 6-7 tbsp
- Freshly grated Parmesan cheese- 2 tbsp
- Italian seasoning - 2 tbsp
- Salt - 1/2 tsp
- FOR THE SAUCE
- Potato starch- 1 tbsp
- Italian seasoning - 1 tsp
- Heavy cream- 1/4 cup
- Milk- 1/4 cup
- Freshly grated Parmesan cheese- 2 tbsp
- Fresh lemon( sliced) - 1
- Fresh dill / thyme - 1 tsp
- Capers- 2 tbsp
Instructions
- In a small bowl combine cornstarch, freshly grated Parmesan cheese and Italian seasonings.
- Coat chicken fillet in the cornstarch-Parmesan mixture.
- Heat 7 tbsp of olive oil in a large pan/ skillet that will accommodate all the chicken. Fry chicken until cooked and golden on each side. ( 4 minutes per side over a medium heat).
- Preheat your oven to 225 C/400 F.
- In a small bowl combine milk,cream, potato cornstarch & Italian seasonings. Pour this mixture over the chicken. Add the sliced lemon and put in the oven. Bake 15-20 minutes.
- Garnish with fresh dill leaves/ thyme and capers.
- Serve with mashed potatoes or spaghetti.
