LEMON CHICKEN RECIPE ( POLLO AL LIMONE)

Ingredients

  • FOR THE CHICKEN
  • Chicken Fillet- 1 kg
  • Corn flour 1/2 cup
  • Olive oil- 6-7 tbsp
  • Freshly grated Parmesan cheese- 2 tbsp
  • Italian seasoning - 2 tbsp
  • Salt - 1/2 tsp
  • FOR THE SAUCE
  • Potato starch- 1 tbsp
  • Italian seasoning - 1 tsp
  • Heavy cream- 1/4 cup
  • Milk- 1/4 cup
  • Freshly grated Parmesan cheese- 2 tbsp
  • Fresh lemon( sliced) - 1
  • Fresh dill / thyme - 1 tsp
  • Capers- 2 tbsp

Instructions

  1. In a small bowl combine cornstarch, freshly grated Parmesan cheese and Italian seasonings.
  2. Coat chicken fillet in the cornstarch-Parmesan mixture.
  3. Heat 7 tbsp of olive oil in a large pan/ skillet that will accommodate all the chicken. Fry chicken until cooked and golden on each side. ( 4 minutes per side over a medium heat).
  4. Preheat your oven to 225 C/400 F.
  5. In a small bowl combine milk,cream, potato cornstarch & Italian seasonings. Pour this mixture over the chicken. Add the sliced lemon and put in the oven. Bake 15-20 minutes.
  6. Garnish with fresh dill leaves/ thyme and capers.
  7. Serve with mashed potatoes or spaghetti.
