Description
This baked hummus crusted chicken is a complete sheet pan chicken dinner with crispy-tender roasted green beans! Tender and juicy chicken breasts on the inside and crispy on the outside!

- 4 x 7 ounce (200 grams) boneless, skinless chicken breasts
- 2 teaspoons cumin powder
- 1 teaspoon garlic salt
- 1 teaspoon onion powder
- 1 teaspoon ground black pepper
- Salt as needed
- 2 cups homemade hummus
- 1/4 cup olive oil
- 2 tablespoons chopped fresh parsley
- 4 garlic cloves, minced
- Juice of 1 lemon
- 1 pound (500 grams) green beans, the rough ends trimmed
- 4-6 lemon slices
Instructions
- Preheat your oven to 400°F |200°C. Lightly grease a baking tray with cooking oil spray. Keep aside.
- Season the chicken with cumin powder, garlic salt, onion powder and black pepper on both sides.
- Place the chicken breasts on the prepared tray and rub hummus all over the chicken to coat evenly.
- Bake in the preheated oven for 15 minutes, then remove from the oven and arrange the green beans around the chicken. Top with lemon slices.
- In a small bowl combine olive oil, garlic, lemon juice and parsley.
- Pour the mixture over the green beans and chicken, toss well until all of the beans are coated in oil and return to the oven for 10-15 minutes, or until chicken is cooked through ( no longer pink in the middle ) and green beans are crisp-tender.
- Garnish with parsley and serve. Enjoy!
