Description

This baked hummus crusted chicken is a complete sheet pan chicken dinner with crispy-tender roasted green beans! Tender and juicy chicken breasts on the inside and crispy on the outside!


Ingredients

Scale
  • 4 x 7 ounce (200 grams) boneless, skinless chicken breasts
  • 2 teaspoons cumin powder
  • 1 teaspoon  garlic salt
  • 1 teaspoon onion powder
  • 1 teaspoon ground black pepper
  • Salt as needed
  • 2 cups homemade hummus
  • 1/4 cup olive oil
  • 2 tablespoons chopped fresh parsley
  • 4 garlic cloves, minced
  • Juice of 1 lemon
  • 1 pound (500 grams) green beans, the rough ends trimmed
  • 4-6 lemon slices

Instructions

  • Preheat your oven to 400°F |200°C. Lightly grease a baking tray with cooking oil spray. Keep aside.
  • Season the chicken with cumin powder, garlic salt, onion powder and black pepper on both sides.
  • Place the chicken breasts on the prepared tray and rub hummus all over the chicken to coat evenly. 
  • Bake in the preheated oven for 15 minutes, then remove from the oven and arrange the green beans around the chicken. Top with lemon slices.
  • In a small bowl combine olive oil, garlic, lemon juice and parsley. 
  • Pour the mixture over the green beans and chicken, toss well until all of the beans are coated in oil and return to the oven for 10-15 minutes, or until chicken is cooked through ( no longer pink in the middle ) and green beans are crisp-tender.
  • Garnish with parsley and serve. Enjoy!
