- 4 lemons
- 3 tablespoons black peppercorns
- 1 tablespoon white peppercorns, optional
- 1 tablespoon coarse salt
Instructions
- Preheat your toaster oven or regular oven to 170˚F.
- Line a small baking sheet with parchment paper.
- Using a microplane grater, zest 4 lemons. Be careful to only remove the yellow outer layer and not the bitter white pith underneath.
- Spread the lemon zest out in a single layer on the prepared baking sheet and place it in the oven.
- Let the lemon zest dry completely for approximately 40-60 minutes.
- Once dried, let the lemon zest cool completely.
- Add the dried lemon zest, peppercorns, white pepper and salt to a spice grinder or small high-powered blender.
- Pulse the mixture a few times until it is combined, but still has some coarse texture. Be careful not to over-process the mixture, as it can become too fine.
- Your homemade dried lemon zest seasoning is ready to use!
- You can keep the seasoning in an airtight container and store it in a spice drawer for up to six months.
