Description
These Gluten Free Peanut Butter cookies are soft and super easy to make! They are naturally vegan, gluten free and dairy-free. Peanut butter lovers should try them. They are seriously the BEST and they taste like classic peanut butter cookies! Grab a cup of homemade almond milk or horchata and enjoy!
Ingredients
FOR THE COOKIES
- Gluten free all-purpose flour- 1 cup
- Almond flour-1 cup
- Baking soda- 1 tsp.
- Creamy peanut butter-1/2 cup
- Vegetable oil- 4 tbsp.
- Honey- 4 tbsp.
- Vanilla extract-1 tbsp.
- Salt-1/2 tsp
FOR THE TOPPING
- Dark chocolate, melted- 200 gm
- Chopped pecans/ almonds-1/2
Instructions
- Preheat your oven to 180 C / 360 F with the rack in the middle of the oven. Line a cookie tray with parchment paper.
- In a large bowl combine gluten free all-purpose flour, almond flour and soda and mix well.
- Add in the peanut butter, vegetable oil, honey, vanilla extract and salt. Mix well to combine.
- Divide the dough into 10-12 equal pieces and roll into balls. Place cookies on the cookie tray ( lined with parchment paper) and use the cookie stamp to press the cookies.
- Bake for 10 minutes or until golden brown. Allow the cookies to cool completely.
- Dip the cookies in melted dark chocolate about halfway and then transfer onto the tray. Top with the chopped pecans or any nuts of your choice.
- Refrigerate for 10 minutes or until set. Enjoy with homemade almond milk or horchata!
