GARLIC SHRIMP IN BUTTERY CREAMY SAUCE

Description

These buttery Garlic Shrimp are tossed in a delicious creamy garlic sauce. Made in one pan and it takes  less than 15 minutes to prepare. This low carb dinner will blow you away.


Ingredients

  • Shrimp ( peeled, deveined & tails on) - 700 gm / 1.5 lb
  • Vegetable oil- 2 tbsp.
  • FOR THE CREAM SAUCE
  • Fresh grated Pecorino Romano cheese*- 1/2 cup
  • Unsalted butter- 1 tbsp.
  • Vegetable oil- 1 tbsp.
  • Garlic cloves ( finely chopped)- 5-6
  • Chicken/Vegetable stock- 1/2 cup
  • Half & Half cream- 1 1/2 cup
  • Fresh lemon juice- 1 tbsp.
  • Peperoncino ( Italian red chili peppers)- 3-4, optional
  • Ground black pepper- as needed
  • Salt- to taste
  • FOR GARNISH
  • Fresh parsley ( chopped)- 1 tbsp.
  • Lemon wedges- as needed

Instructions

  1. In a large pan heat 2 tbsp. vegetable oil, add shrimp, season with salt and black pepper and cook for 4 minutes ( 2 minutes per side) or until shrimp are pink and opaque. Transfer to a plate.

  3. In the same pan melt the butter, add vegetable oil, garlic and sauté until fragrant but not browned (about 20 seconds) over medium heat. Pour in the chicken stock, lemon juice and allow to simmer for 1-2 minutes. Add in half & half cream; reduce the heat to low-medium and allow to simmer, stirring occasionally.

  5. Stir in the grated cheese, peperoncino peppers and and allow sauce to simmer until the cheese melts and sauce is thick. Return the shrimp back into the pan, sprinkle with the chopped fresh parsley. Adjust salt and pepper.

  7. Serve with lemon wedges.

Notes

* if there’s no Pecorino Romano, use Parmesan.
