  • Eggplants- 600 gm
  • Eggs- 3, large
  • Onion ( finely chopped)-1
  • Dry red chili ( sliced) -1
  • Vegetable oil- 4 tbsp.
  • Salt- to taste
  • Black pepper- 1/4 tbsp
  • Parsley ( chopped)- 1 tbsp.


  1. Peel the skin of eggplants and chop into bite-sized pieces.
  2. In a small bowl whisk eggs; then add a pinch of salt and mix well.
  3. Pour the egg- mixture over the chopped eggplants, mix well to coat and set aside for 1 hour.
  4. In a skillet/ a frying pan heat 4 tbsp. of vegetable oil. Add the chopped onion and fry until golden brown; then add the eggplants and cook 20-25 minutes, stirring from time to time. Adjust salt.
  5. Season with black pepper and sprinkle the sliced chilies. Garnish with the fresh parsley leaves.
