Description
This is the best recipe for the tastiest and fluffy scrambled eggs. We’re using a couple of key secret ingredients (without milk) to make these creamy, light, airy eggs really come to life.

- 2 large eggs
- 2 tablespoons salted butter
- 1/4 cup shredded Mozzarella cheese
- Green onions, to garnish
Instructions
- Crack the eggs into a medium bowl and whisk for 1 minute or until no streaks of egg white remaining.
- Melt the butter over low heat in an 8-inch nonstick skillet.
- Add the eggs and let them cook for a few seconds without stirring, then whisk the top, without touching down on the bottom of the pan. When the top is foamy, sprinkle mozzarella cheese and whisk again.
- Allow the bottom of the eggs set for 4-5 seconds. Using a silicone spatula, fold and stir the eggs from the edge of the pan into the middle. Continue to do this for 30 seconds.
- Remove from the heat. Fold and stir one more time to allow the uncooked egg spots to hit the surface and to form more curds.
- Season with salt and pepper.
- Garnish with green onions.
- Serve immediately and enjoy!
