ENERGY BALL RECIPE ( VEGAN+GF)

Ingredients

  • Unsweetened shredded coconut - 1 cup (plus ¼ cup for rolling)
  • Rolled oats- 1 cup
  • Sweetened dried Cantaloupe - 3/4 cup
  • Cashew nut butter- 7-8 tbsp
  • Honey- 1 tbsp
  • For Ganache
  • Vegan chocolate bar- 225 gm
  • Heavy cream- 180 ml
  • Vegetable butter- 1 tbsp

Instructions

  1. In a large bowl mix shredded coconut, rolled oats, cantaloupe, honey & cashew nut butter. Mix well.
  2. Roll into bite-sized balls using hands.
  3. Melt vegan chocolate over a double boiler, add vegan butter & heavy cream.Mix well. Dip each ball into the melted chocolate and then roll in shredded coconut/rainbow vermicelli. Put them onto the plate.
  4. Allow energy balls to chill in the refrigerator for at least 45 minutes until chocolate has set.
  5. You can store these energy balls in an airtight container in the fridge for 5 days.
