Ingredients
- Unsweetened shredded coconut - 1 cup (plus ¼ cup for rolling)
- Rolled oats- 1 cup
- Sweetened dried Cantaloupe - 3/4 cup
- Cashew nut butter- 7-8 tbsp
- Honey- 1 tbsp
- For Ganache
- Vegan chocolate bar- 225 gm
- Heavy cream- 180 ml
- Vegetable butter- 1 tbsp
Instructions
- In a large bowl mix shredded coconut, rolled oats, cantaloupe, honey & cashew nut butter. Mix well.
- Roll into bite-sized balls using hands.
- Melt vegan chocolate over a double boiler, add vegan butter & heavy cream.Mix well. Dip each ball into the melted chocolate and then roll in shredded coconut/rainbow vermicelli. Put them onto the plate.
- Allow energy balls to chill in the refrigerator for at least 45 minutes until chocolate has set.
- You can store these energy balls in an airtight container in the fridge for 5 days.
