This easy everyday Cabbage and cucumber salad is highly versatile, inexpensive and quick to make! Perfect for potlucks, barbecue or any occasion.
Ingredients
For The Salad:
- Cabbage (shredded)- 7-8 cups
- Medium cucumbers- 3
- Scallions ( sliced)-1/3 cup
- Fresh dill (finely chopped)-4 tablespoons
For The Dressing:
- Sunflower or olive oil-6 tablespoons
- Apple cider or distilled white vinegar-4 tablespoons
- Salt-3/4 teaspoon or to taste
- Ground black pepper-1/4 teaspoon or to taste
Instructions
- In a small bowl combine oil, vinegar, salt and ground black pepper. Keep aside.
- Using a sharp knife, thinly slice the cabbage, chop the cucumbers, dill and green onion. Place everything into a large bowl.
- Add the dressing and mix to combine. Enjoy!
