BAKED SALMON RECIPE FOIL

Ingredients

  • Olive oil- 2 tbsp/ 30 ml
  • Salmon Fillets- 4
  • Onion- 1 large (finely sliced)
  • Tomatoes- 2 (sliced)
  • Mild Cheddar Cheese- 4-5 slices
  • Smoked Chorizo sausage- 1 ( If you can’t find these Chilean sausage, use bacon or any sausages)
  • Dried oregano- 2 tbsp / 10 ml
  • Fresh Rosemary- 1 tbsp (finely chopped)
  • Lemon (optional)-1 (sliced)
  • Salt- To Taste
  • Black Pepper-To Taste
  • Serve with potatoes or salad.

Instructions

  1. Preheat four 20cm/8in squares of foil and brush each with little oil. Preheat the oven to 180 C/350F /Gas 4
  2. Place one salmon fillet in the middle of each piece of foil. Top with a few slices of onion, tomato, chorizo sausage and cheese. Season each peace with oregano, rosemary, salt and black pepper.
  3. Bring up the sides of the foil and seal well at the top to create a neat package.
  4. Place the packages on the baking sheet and cook about 20 minutes, until the salmon is cooked through and opaque and the cheese is melted.
  5. Serve with potatoes and summer salad.
