Fish cutlets form one of the simple, home-made meals that are good enough to inspire such a career. There are many variations of this dinner favorite, often consisting of cubed potatoes, pre-cooked fish and a selection of tasty herbs and spices. They are sometimes crumbed and sometimes not. This is an unfussy protein for a main meal, and it is in good company with buttery crushed potatoes and sauteed vegetables. When selecting the fish for your fish cutlets, you can use anything from wild-caught salmon to canned tuna, depending on its availability and your preference. If you choose to add in cubes of potato, be sure to boil the vegetable beforehand. Try exchanging this for sweet potato for a carb-free version. You can also exchange the breadcrumbs for desiccated coconut if you are following a gluten free or paleo diet. You may also choose to deep fry them in coconut oil. The cutlets are also delicious when they are baked in the oven.
Some recipes recommend that you fry the onions with fresh garlic and ginger before adding them to the filling. This ensures that they become soft and blend well with the other ingredients. It also brings out their sweetness. However, if you choose to put them into the mixture before it is fried, they will add a fresh taste and crunch to fish cutlets. This really just depends on your preference. The selection of herbs and spices that you add to your recipe is much the same. While fish cutlets are a popular Indian dish, Western interpretations are suitable for a milder palate. This is a recipe where you can comfortably include fresh slivers of chili as the subtle flavor of the fish will not be easily overpowered. You can use a combination of fresh and dried herbs. A firm favorite is dhania, which you may know as cilantro or coriander. You can also use parsley or chives and some recipes even call for mint leaves. Be sure to chop these finely before adding it in. We like to use a lot of different spices in our recipe. Along with coarsely ground sea salt and black pepper, you can choose from cumin powder, turmeric, garam masala, chili powder and whatever other spices tickle your fancy. Add in a squeeze of lemon juice for extra freshness.
Be sure to fry the cutlets until they appear a dark golden shade. Drain them on a drying rack or over a paper towel if needed. You can really get creative with how you choose to serve your fish cutlets. Why not serve them as a burger filling along with guacamole, salsa and crème fraîche?

Ingredients
- Fresh White Fish Fillet- 1 kg or 2.2 lbs
- Onion ( finely chopped) - 1 large
- Garlic cloves- 4-5 medium
- Leek( chopped) -3 tbsp
- Parsley ( chopped) - 2 tbsp
- Ginger ( grated) - 1 tsp
- Red Chili Flakes- 1 tsp
- Lemon juice- 2 tbsp
- Any fish spice mix- 1 tbsp
- Salt- To Taste
- Black Pepper- To Taste
- Corn Flour- 1 cup ( for coating)
- Vegetable oil - ½ cup
Instructions
- Using your electrical grinder, grind white fish fillet, parsley, ginger, garlic cloves, onion, leek.
- Add salt, seasoning, lemon juice, black pepper & red chili flakes. Mix well.
- Heat ½ cup Canola oil or any vegetable oil in the skillet ( I used just non-stick frying pan).
- Form approximately 16- 20 cutlets.Coat each cutlet in corn flour. Fry cutlets 10-15 minutes until they become golden on both sides.
- Serve immediately with mashed potatoes and any summer salad dressed with sour cream.
- These cutlets can be used for making fish burgers.
Notes
These fish cutlets are GLUTEN FREE, because corn ( in all form) doesn't contain harmful Gluten.
